The award of the Bayonne Ham PGI* in 1998 allowed this ham to regain its authenticity. Indeed, it is here, in the heart of the Adour Basin, that this dry-cured ham was born. Its taste and typical flavors are the result of decades of work and ancestral know-how. Our Bayonne ham is distinctive: lightly salted, tender and melt-in-the-mouth.

Quarter Bayonne Ham: Serving suggestions
To enjoy it, first use a knife to remove the rind. Remove the ham rind to the thickness you want to slice. Next, take a sharp knife and cut nice slices. Thick, thin, or shredded, cut to your liking. You can also dice the ham to add flavor to your dishes or replace traditional bacon bits! Finally, one last tip: keep the fat! It's what gives the ham its flavor. On toast, you won't need to add butter.
Feel free to taste this ham, either raw or cooked. Be careful, though, as cooking brings out the saltiness.
