Cooking tips for roast duck breast stuffed with foie gras

Brown both sides of the skin in a frying pan for 3 to 5 minutes.

Place in a preheated oven at 190-200°C (depending on the power of the oven, or thermostat setting 6) for 30 to 40 minutes.

Cover with aluminum foil to keep warm.

Cut nice slices about 1.5 cm thick between the strings, heat a frying pan and cook the tournedos for 3 to 4 minutes on each side.
