What is axoa?

Did you know? Axoa means "minced" in Basque and is pronounced "achoá." It is minced meat accompanied by peppers and onions, seasoned with Espelette pepper and gently simmered in a pot. This dish is traditionally made with veal and can be found everywhere in the Basque Country!

We have chosen to revisit and modernize this recipe by replacing veal with pork. But not just any pork, pork with the IGP Porc du Sud Ouest label, of course!
