Foie gras and duck breast tatin

You are surely familiar with apple tarte tatin, but perhaps not with duck breast and foie gras tatin! This original recipe will impress both visually and in terms of flavor. You will see—it is simpler than it looks if you follow our advice.

Ingredients (serves 4):

To prepare this duck breast and foie gras tatin, you will need:

  • ✔ 4 slices of foie gras
  • ✔ 16 thin slices of duck breast
  • ✔ 4 apples
  • ✔ 4 slices of toasted sandwich bread
  • ✔ 4 knobs of butter

Preparation steps:

  1. Peel the apples and cut them into half-moon slices.
  2. Sauté the apple slices in butter for about 5 minutes.
  3. In a small mold or ramekin, layer apples, then 2 slices of duck breast, another layer of apples, and again 2 slices of duck breast. Finish with a final layer of apples.
  4. Bake in a hot oven for about 5 minutes.
  5. Remove from the oven and unmold onto the toasted bread.
  6. Top with a slice of foie gras.
  7. Serve while the duck breast and foie gras tatin is still hot.

Brick pastry with foie gras, mushrooms and apple

Brick pastries originate from the Maghreb and are traditionally filled with tuna. Here, we offer a revisited version—simple to prepare, just follow our tips.

Ingredients (serves 4):

  • ✔ 8 brick pastry sheets
  • ✔ 1 block of foie gras
  • ✔ 5 fresh button mushrooms
  • ✔ 2 Golden apples
  • ✔ 1 teaspoon balsamic vinegar

Preparation steps:

The choice of ingredients is just as important as the recipe itself. For authentic flavors, always use fresh, high-quality products.

  1. Peel the apples, slice them, and cook slowly in butter.
  2. Add the balsamic vinegar 2 minutes after cooking begins.
  3. Clean and chop the mushrooms, then cook them gently in butter in a separate pan.
  4. Preheat the oven to 210°C (410°F).
  5. Layer 2 brick sheets, add a tablespoon of apples, a teaspoon of mushrooms, and a slice of foie gras.
  6. Form small parcels and place them in the preheated oven.
  7. After 15 minutes, remove from the oven and serve. The foie gras will have melted over the mushrooms and apples, and the pastry will be perfectly crisp.
